Recipe: White Peach Sorbet

If you have an ice cream maker, this hot and humid week is definitely the time to break it out and make some ice cream, sherbet or sorbet. To get you started, here’s a super easy recipe for white peach sorbet.

White Peach Sorbet

6-7 ripe white peaches, pitted and coarsely chopped
2/3 cup water
3/4 cup sugar
1 teaspoon kirsch or 1/4 teaspoon lemon juice (optional)

Place the chopped peaches in a medium saucepan with the water. Cook over medium heat until the peaches are soft and beginning to fall apart. Remove from heat and add sugar. Let cool to room temperature. If desired, add kirsch or lemon juice. Place in the refrigerator until chilled (overnight works great). Place chilled peach mixture into a blender or food processor and blend until smooth. Pour mixture into ice cream maker and churn according to the manufacturer’s instructions.

Even though the skins are left on the peaches, it is still super smooth, and the pink blush from the skins gives the finished sorbet a lovely pale pink color. This is a wonderful sweet treat to cool off during these hot, humid days.
